Creamy Mushroom Chicken and Wild Rice Soup: A Cozy Culinary Delight

A hearty and comforting soup made with tender chicken, earthy mushrooms, and nutty wild rice in a creamy, dairy-free broth.

  • 1 lb chicken breast, diced
  • 1 cup wild rice, rinsed
  • 8 oz cremini mushrooms, sliced
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup coconut milk
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Optional: 1 cup spinach, chopped
  • Optional: 1/2 cup carrots, diced
  • Optional: 2 tablespoons fresh parsley, chopped
  • Optional: 1 tablespoon lemon juice

Instructions

  1. Dice the chicken, slice mushrooms, chop onion and spinach, and mince garlic.
  2. Rinse wild rice under cold water and set aside.
  3. In a large pot, heat olive oil over medium heat. Brown the chicken on all sides. Remove and set aside.
  4. Sauté onions and garlic in the same pot until translucent (about 5 minutes).
  5. Add mushrooms and cook for 5 minutes until they release moisture and begin to brown.
  6. Return chicken to the pot, add wild rice, chicken broth, and thyme. Stir and bring to a boil.
  7. Reduce heat to low, cover, and simmer for 45 minutes or until rice is tender.
  8. Stir in coconut milk, spinach, and carrots. Simmer an additional 5-10 minutes.
  9. Season with salt, pepper, and lemon juice. Garnish with fresh parsley before serving.

Notes

Toast the wild rice beforehand for a nuttier flavor. Avoid overcooking chicken to keep it tender. Add salt toward the end to avoid overpowering the flavors.
