Irresistibly Creamy French Chicken Tarragon Delight

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 tablespoon unsalted butter
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 2 tablespoons Dijon mustard
  • 3 tablespoons fresh tarragon, chopped
  • Salt and pepper, to taste
  • 2 cloves garlic, minced
  • 1 medium onion, finely chopped
  • Optional: 1 cup sliced mushrooms
  • Optional: 1/2 cup white wine
  • Optional: 1 tablespoon lemon juice
  • Optional: 1/4 cup chopped parsley for garnish

Instructions

  1. Season chicken breasts with salt and pepper on both sides.
  2. Chop onion and mince garlic; prepare chopped fresh tarragon.
  3. Heat olive oil and butter in a skillet over medium-high heat. Sear chicken until golden brown, about 4–5 minutes per side. Remove and set aside.
  4. In the same skillet, cook chopped onion until translucent (3–4 minutes), then stir in garlic and cook for 1 more minute.
  5. Add mushrooms if using, and cook until tender.
  6. Pour in chicken broth (and white wine if using), bringing it to a simmer while scraping browned bits.
  7. Reduce heat to low. Stir in heavy cream and Dijon mustard until combined.
  8. Return chicken to skillet. Spoon sauce over each piece, cover, and simmer for 15–20 minutes until cooked through.
  9. Add tarragon and lemon juice in final 5 minutes of cooking.
  10. Garnish with chopped parsley and serve.

Notes

Use fresh tarragon for the best flavor. Let chicken rest before slicing. Simmer sauce gently to avoid separation. Avoid overcrowding the pan when searing.
