  • 1 tablespoon unsalted butter
  • 1 medium onion, finely chopped
  • 3 garlic cloves, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 2 tablespoons fresh tarragon, chopped
  • Salt and pepper to taste
  • Optional: 1 cup sliced mushrooms
  • Optional: 1/4 cup white wine
  • Optional: 2 tablespoons Dijon mustard
  • Optional: 1 tablespoon lemon juice

Instructions

  1. Season the chicken breasts with salt and pepper.
  2. Heat olive oil and butter in a large skillet over medium-high heat.
  3. Cook chicken for 5-7 minutes on each side until golden and cooked through. Remove and set aside.
  4. In the same skillet, sauté the chopped onion until translucent.
  5. Add minced garlic and cook for 1 minute.
  6. If using, pour in white wine and reduce by half.
  7. Add chicken broth and bring to a simmer.
  8. Stir in heavy cream and cook until sauce thickens.
  9. Return chicken to skillet and coat with sauce.
  10. Add fresh tarragon and any optional ingredients like mushrooms or Dijon mustard.
  11. Simmer for 5 more minutes to meld flavors.
  12. Finish with lemon juice before serving.

Notes

Use fresh tarragon for best flavor. Ensure chicken is not overcooked and always use a thermometer to confirm it reaches 165°F.
