Creamy Crispy Singapore Butter Chicken: A Fusion Delight for Your Taste Buds

A fusion of traditional Singaporean spices and rich creamy sauce, this crispy butter chicken is a flavorful and nourishing twist on a classic favorite.

  • 1.5 lbs boneless, skinless chicken thighs
  • 1 tablespoon coconut oil
  • 1 cup coconut milk
  • 2 tablespoons unsalted butter
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 2 tablespoons tomato paste
  • 1 tablespoon soy sauce
  • 1 tablespoon fish sauce
  • 2 teaspoons curry powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Optional: 1 red bell pepper, sliced
  • Optional: 1 green chili, sliced
  • Optional: Fresh cilantro for garnish
  • Optional: 1 tablespoon honey

Instructions

  1. Cut the chicken thighs into bite-sized pieces.
  2. In a bowl, toss chicken with half the curry powder, paprika, salt, and pepper. Marinate for at least 30 minutes.
  3. Heat coconut oil in a skillet over medium-high heat. Cook chicken until browned and crispy, about 5–7 minutes. Remove and set aside.
  4. In the same skillet, add butter, onion, garlic, and ginger. Sauté until onion is translucent.
  5. Add tomato paste, remaining curry powder, soy sauce, and fish sauce. Cook for 2 minutes.
  6. Pour in coconut milk and stir to combine. Simmer gently.
  7. Return chicken to the skillet and simmer for 10 minutes.
  8. If using, add bell pepper and green chili during last 5 minutes.
  9. Adjust seasoning with salt, pepper, and honey. Serve hot, garnished with cilantro.

Notes

For extra crispiness, coat chicken in cornstarch before frying. Avoid overcrowding the pan to maintain a proper sear.
