Instructions

  1. Gather all ingredients and prepare your workspace.
  2. Dice the onion, mince the garlic, slice the mushrooms, and chop the spinach. Set aside.
  3. Mix almond milk with cornstarch in a small bowl until smooth.
  4. Cook pasta according to package instructions. Drain and set aside.
  5. In a large skillet, heat olive oil over medium heat. Sauté onion and garlic until translucent (3–4 minutes).
  6. Add mushrooms and cook until browned (5–6 minutes).
  7. Stir in spinach and cook until wilted (about 2 minutes).
  8. Pour in almond milk mixture, stirring constantly until sauce thickens (3–4 minutes).
  9. Stir in nutritional yeast, salt, and pepper. Adjust seasoning to taste.
  10. Combine cooked pasta with sauce until well coated.
  11. Add optional sun-dried tomatoes, chicken, or tofu. Heat through.
  12. Serve immediately, topped with grated Parmesan if desired.

Notes

To keep pasta from becoming mushy, avoid overcooking. Use fresh ingredients for the best flavor. Dissolve cornstarch completely in almond milk before cooking to ensure a smooth sauce.
