  • 6 cups chicken broth
  • 2 cups milk (or plant-based milk of choice)
  • 1 package (9 ounces) cheese tortellini
  • Salt and pepper to taste
  • 1 cup baby spinach, roughly chopped
  • 1/4 cup grated Parmesan cheese
  • Optional: 1/2 cup heavy cream for extra richness
  • Optional: 1/4 cup sun-dried tomatoes, chopped
  • Optional: Fresh herbs like parsley or basil for garnish
  • Optional: Red pepper flakes for a hint of spice

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced chicken and cook until browned on all sides, about 5-7 minutes. Remove and set aside.
  2. In the same pot, sauté chopped onion, carrots, and celery for 5 minutes until softened.
  3. Add garlic, thyme, and basil, stirring for 1 minute until fragrant.
  4. Pour in chicken broth and bring to a boil. Reduce heat and simmer for 10 minutes.
  5. Add cooked chicken and tortellini. Cook for 7-9 minutes until tortellini is tender.
  6. Stir in milk and spinach. Cook until spinach is wilted, about 2 minutes. Season with salt and pepper to taste.
  7. Stir in Parmesan cheese until melted. Add optional heavy cream for extra richness, if desired.
  8. Serve hot, garnished with fresh herbs and red pepper flakes if using.

Notes

Avoid overcooking tortellini to maintain texture. Don’t boil after adding milk to prevent curdling. For enhanced flavor, use homemade broth and sear chicken before simmering.
