Creamy Chicken and Tomato Pasta: A Comforting Weeknight Delight

A comforting blend of tender chicken, juicy tomatoes, and creamy sauce tossed with pasta – perfect for busy weeknights or cozy dinners.

  • 8 oz (225g) pasta of your choice (penne, fusilli, or spaghetti)
  • 2 tablespoons olive oil
  • 1 lb (450g) boneless, skinless chicken breasts, diced
  • 2 cloves garlic, minced
  • 1 cup (240ml) heavy cream
  • 1/2 cup (120ml) chicken broth
  • 1 can (14 oz/400g) diced tomatoes, drained
  • 1/2 cup (50g) grated parmesan cheese
  • Salt and pepper to taste
  • 1 teaspoon dried basil
  • 1/2 teaspoon red pepper flakes (optional)
  • Fresh basil leaves for garnish

Instructions

  1. Cook the pasta in a large pot of boiling salted water until al dente. Drain and set aside.
  2. Heat olive oil in a large skillet over medium-high heat. Add diced chicken, season with salt and pepper, and cook until browned and cooked through, about 6–8 minutes. Remove from skillet and set aside.
  3. In the same skillet, sauté minced garlic for 1–2 minutes until fragrant.
  4. Stir in chicken broth and heavy cream, bringing to a simmer. Add diced tomatoes, dried basil, and red pepper flakes. Simmer for about 5 minutes.
  5. Return the chicken to the skillet, then add cooked pasta. Toss to coat with the sauce.
  6. Stir in parmesan cheese and mix until melted and creamy.
  7. Garnish with fresh basil and serve immediately.

Notes

Use freshly grated parmesan for best flavor. Deglaze the skillet with a splash of white wine after cooking the chicken for added depth. Avoid overcooking pasta and overcrowding the skillet.
