Savory Chicken Sausage Pasta: A Wholesome Delight

  • 12 oz (340g) whole wheat pasta
  • 1 lb (450g) chicken sausage, sliced
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 zucchini, sliced
  • 2 cups (480ml) baby spinach
  • 1 cup (240ml) low-sodium chicken broth
  • 1 cup (240ml) heavy cream
  • 1/2 cup (50g) grated Parmesan cheese
  • Salt and pepper to taste
  • Optional: 1/4 cup (60ml) white wine
  • Optional: 1 teaspoon red pepper flakes
  • Optional: 1/2 cup (90g) cherry tomatoes, halved
  • Fresh basil leaves for garnish

Instructions

  1. Prepare ingredients: chop onion, mince garlic, slice bell pepper and zucchini. Set aside.
  2. Boil a large pot of salted water. Cook pasta until al dente, then drain and set aside.
  3. In a large skillet, heat olive oil over medium heat. Add chicken sausage and brown on both sides, about 5-7 minutes. Remove and set aside.
  4. Add onion to skillet, sauté until translucent (about 3 minutes). Add garlic and cook 1 minute more.
  5. Add bell pepper and zucchini, cook until tender (about 5 minutes).
  6. Pour in chicken broth and bring to a simmer. If using, add white wine and red pepper flakes. Reduce slightly, about 2 minutes.
  7. Reduce heat to low, stir in heavy cream. Return sausage to skillet and add baby spinach. Stir until spinach wilts.
  8. Add cooked pasta and toss to combine. Stir in Parmesan until melted. Season with salt and pepper to taste.
  9. Optional: Add cherry tomatoes and garnish with fresh basil before serving.

Notes

Avoid overcooking pasta—cook it al dente. For deeper flavor, roast the vegetables before adding. Freshly grated Parmesan enhances flavor significantly.
