Cottage Cheese Cloud Bread

Light, fluffy, and protein-packed, this cottage cheese cloud bread is a low-carb, gluten-free alternative to traditional bread—perfect for keto diets, sandwiches, or healthy snacks.

  • 3 large eggs, separated

  • ½ cup full-fat cottage cheese (blended smooth)

  • ¼ teaspoon sea salt

  • ¼ teaspoon cream of tartar

  • Optional: garlic powder, fresh herbs, or nutritional yeast for flavor

Instructions

  1. Preheat oven to 300°F (150°C) and line a baking sheet with parchment paper or a silicone mat.

  2. Blend cottage cheese until completely smooth. Set aside.

  3. Separate eggs. Place egg whites in one bowl and yolks in another.

  4. Whisk egg whites with cream of tartar until stiff peaks form. Use a hand or stand mixer.

  5. Mix yolks with the blended cottage cheese and salt. Stir until well combined.

  6. Gently fold egg whites into the yolk mixture, one-third at a time. Be careful not to deflate.

  7. Spoon the batter into 6–8 rounds (or one loaf) on the prepared baking sheet.

  8. Bake for 25–30 minutes or until golden and firm to the touch.

  9. Cool on a wire rack for 10 minutes before serving. Enjoy warm or toasted!

Notes

  • For a firmer texture, add 1 tbsp almond flour

  • For sweeter flavor, mix in a drop of vanilla and cinnamon

  • Use full-fat cottage cheese for best structure
