This Cottage Cheese Buffalo Chicken Dip is creamy, spicy, and packed with protein. A lighter twist on the classic, it’s perfect for parties, meal prep, or game day.

  • 1½ cups low-fat or full-fat cottage cheese (blended smooth)

  • 1½ cups cooked chicken (shredded or chopped)

  • ⅓ cup Buffalo sauce (like Frank’s RedHot or homemade)

  • ½ cup shredded cheddar cheese

  • ¼ cup ranch dressing or Greek yogurt ranch

  • 2 tbsp crumbled blue cheese (optional)

  • Chopped green onions or parsley for garnish

Instructions

 

1. Blend the Cottage Cheese
In a food processor or blender, whip the cottage cheese until completely smooth. This replaces cream cheese while keeping the dip rich and creamy.

2. Mix the Ingredients
In a large mixing bowl, combine the blended cottage cheese, shredded chicken, Buffalo sauce, ranch, and half of the shredded cheddar.

3. Bake Until Bubbly
Transfer the mixture to an oven-safe dish. Top with the remaining cheddar and optional blue cheese. Bake at 375°F (190°C) for 20–25 minutes until hot and bubbly.

 

4. Garnish & Serve
Remove from the oven, garnish with green onions or parsley, and serve hot with celery sticks, bell pepper slices, or whole grain chips.

Notes

  • Make it spicier: Add a dash of cayenne pepper or diced jalapeños to the mix before baking for extra heat.

  • Make it milder: Use a mild Buffalo sauce or mix it with a little Greek yogurt to soften the spice.

  • For extra creaminess: Add 2–3 tbsp of Greek yogurt or sour cream to the base if you prefer a richer texture.

  • Need it dairy-free? Try using a plant-based cottage cheese and dairy-free cheddar for a vegan version.

  • Use rotisserie chicken for convenience: It’s a time-saver and adds extra flavor—just be mindful of added sodium.

  • Make it ahead: Assemble the dip up to 2 days in advance, store covered in the fridge, and bake right before serving.

  • Great for meal prep: Freeze leftovers in silicone muffin trays for grab-and-reheat single servings!
