  • 1 lb white fish fillets (such as cod or tilapia)
  • 1 can (14 oz) coconut milk
  • 2 tablespoons coconut oil
  • 3 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1 tablespoon grated fresh ginger
  • 2 tablespoons lime juice
  • 1 tablespoon fish sauce
  • 1 tablespoon curry powder
  • 1 teaspoon turmeric
  • 1 teaspoon chili flakes (optional)
  • Salt and pepper to taste
  • Fresh cilantro, for garnish
  • Lime wedges, for serving
  • Optional: 1 cup baby spinach
  • Optional: 1/2 cup cherry tomatoes, halved
  • Optional: 1 bell pepper, sliced

Instructions

  1. Pat the fish fillets dry with paper towel and season with salt and pepper.
  2. Prepare vegetables: mince garlic, chop onion, grate ginger, slice bell pepper and halve cherry tomatoes if using.
  3. Juice limes to yield about 2 tablespoons of lime juice.
  4. Heat coconut oil in a large pan over medium heat. Add onion and sauté 3–4 minutes until translucent.
  5. Add garlic and ginger, cook 1 minute until fragrant.
  6. Stir in curry powder, turmeric, and chili flakes until combined.
  7. Pour in coconut milk and fish sauce, stir to combine, bring to a gentle simmer.
  8. Add seasoned fish fillets, cover and cook for 5 minutes.
  9. Flip fish, add lime juice, and simmer 5–7 minutes more until fish flakes easily.
  10. If using optional vegetables, add them in last 3–4 minutes of cooking.
  11. Remove from heat, garnish with cilantro and serve with lime wedges.

Notes

Use fresh lime juice for best flavor. Avoid overcooking the fish. Let curry sit a few minutes after cooking to enhance flavor.
