Heavenly Cinnamon Tea Cake: A Wholesome Delight

A warm, comforting Cinnamon Tea Cake made with simple pantry ingredients, perfectly moist with hints of vanilla and optional add-ins like nuts or chocolate chips.

  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1/2 cup plain yogurt
  • 2 large eggs
  • 1 tablespoon ground cinnamon
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • Optional: 1/2 cup chopped walnuts or pecans
  • Optional: 1/4 cup raisins or dried cranberries
  • Optional: 1/4 cup dark chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. In a medium bowl, whisk together the flour, cinnamon, baking powder, baking soda, and salt.
  3. In a large bowl, cream together the softened butter and sugar until light and fluffy.
  4. Add the eggs one at a time, beating well after each addition, and then mix in the vanilla extract.
  5. Gradually add the dry ingredients to the wet mixture, alternating with the yogurt, beginning and ending with the dry ingredients.
  6. Fold in any optional add-ins such as nuts or chocolate chips, if using.
  7. Pour the batter into the prepared cake pan and smooth the top with a spatula.
  8. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Notes

For an aromatic boost, lightly toast the cinnamon before mixing. Keep all ingredients at room temperature for better texture. Avoid overmixing the batter, and don’t open the oven door while baking to prevent the cake from sinking.
