  • 3 tablespoons pure maple syrup
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon sea salt

  • Optional: 1/4 cup chopped pecans
  • Optional: 1/2 teaspoon ground nutmeg
  • Optional: 1 tablespoon fresh rosemary, chopped

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Peel and cube the sweet potatoes into 1-inch pieces.
  3. In a large bowl, whisk together olive oil, maple syrup, cinnamon, salt, and pepper.
  4. Add the sweet potatoes and toss to coat evenly.
  5. Spread potatoes in a single layer on the baking sheet without overcrowding.
  6. Roast for 25-30 minutes, stirring halfway through, until tender and caramelized.
  7. If using, add chopped pecans during the last 5 minutes of roasting.
