A festive and flavorful salmon dish glazed with honey, Dijon, and garlic, finished with fresh herbs and pomegranate for a holiday-worthy presentation.

  • 1 whole side of salmon (about 2 pounds), skin-on
  • 2 tablespoons olive oil
  • 3 tablespoons honey
  • 2 tablespoons Dijon mustard
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Juice of 1 lemon
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup pomegranate seeds
  • 1 lemon, sliced, for garnish
  • Optional: 1 tablespoon fresh dill, chopped
  • Optional: 1 teaspoon smoked paprika
  • Optional: 1 tablespoon capers
  • Optional: 1/4 cup chopped walnuts

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Place salmon skin-side down on the prepared sheet and pat dry with paper towels.
  3. In a bowl, whisk olive oil, honey, Dijon mustard, garlic, salt, and pepper.
  4. Brush glaze evenly over salmon and drizzle lemon juice on top.
  5. Let sit for 10 minutes.
  6. Bake for 15-20 minutes, until salmon flakes easily with a fork.
  7. Remove and rest briefly. Top with parsley and pomegranate seeds.
  8. Garnish with lemon slices and any optional add-ins before serving.

Notes

Use a meat thermometer to ensure the salmon reaches 145°F (63°C). Broil for 2-3 minutes at the end for crispier skin.
