  • 2 medium beets, roasted and diced
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1/2 cup crumbled feta cheese
  • 1/4 cup red onion, finely chopped
  • 3 cups baby spinach or mixed greens
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Optional: 1/4 cup walnuts or pecans, toasted
  • Optional: 1/4 cup dried cranberries or raisins
  • Optional: 1/2 avocado, sliced
  • Optional: Fresh herbs like parsley or mint, for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Peel and dice the beets, then toss them with olive oil, salt, and pepper. Roast for 30–35 minutes until tender and slightly caramelized. Let cool.
  3. Drain and rinse chickpeas. Pat them dry with a paper towel.
  4. Whisk together olive oil, lemon juice, salt, and pepper in a small bowl for the dressing.
  5. In a large bowl, combine roasted beets, chickpeas, spinach, red onion, and feta.
  6. Pour the dressing over the salad and toss gently.
  7. Add optional toppings like nuts, dried fruit, or avocado. Garnish with fresh herbs if desired.

Notes

To deepen flavor, marinate the chickpeas in lemon juice and olive oil for 10–15 minutes. Avoid overcooking the beets to maintain texture.
