Chicken Zucchini Bake

A wholesome and hearty one-pan Chicken Zucchini Bake, loaded with fresh veggies, seasoned chicken, and melted cheese – the perfect comforting yet healthy dish.

Ingredients

  • 2 large zucchinis, sliced
  • 1.5 pounds of boneless, skinless chicken breasts, cut into cubes
  • 1 cup of cherry tomatoes, halved
  • 1 medium onion, thinly sliced
  • 2 cloves of garlic, minced
  • 1 cup of shredded mozzarella cheese
  • 1/2 cup of grated Parmesan cheese
  • 2 tablespoons of olive oil
  • 1 tablespoon of Italian seasoning
  • Salt and pepper to taste
  • Optional: 1/2 cup of sliced mushrooms
  • Optional: 1 bell pepper, chopped
  • Optional: 1/4 cup of fresh basil, chopped

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, toss chicken cubes with olive oil, garlic, Italian seasoning, salt, and pepper.
  3. Slice zucchini and onions, and halve the cherry tomatoes.
  4. In a large baking dish, layer zucchini slices evenly.
  5. Spread seasoned chicken over the zucchini.
  6. Add sliced onions and cherry tomatoes on top of the chicken.
  7. Sprinkle mozzarella and Parmesan cheeses evenly.
  8. Add optional mushrooms and bell peppers if using.
  9. Cover with foil and bake for 25 minutes.
  10. Remove foil and bake an additional 15-20 minutes until chicken is cooked and cheese is golden.
  11. Garnish with fresh basil before serving.

Notes

For best results, slice vegetables evenly and use fresh herbs. Let the bake rest for 5 minutes before serving. Avoid overcooking chicken to maintain juiciness.
