  • 8 oz whole grain pasta
  • 1 lb chicken sausage, sliced
  • 2 cups cherry tomatoes, halved
  • 1 cup spinach leaves
  • 2 cloves garlic, minced
  • 1 onion, chopped
  • 1 tbsp olive oil
  • 1/2 tsp red pepper flakes
  • Salt and pepper to taste
  • 1/4 cup grated Parmesan cheese
  • Fresh basil leaves for garnish
  • Optional: 1/2 cup sliced bell peppers
  • Optional: 1/4 cup sun-dried tomatoes
  • Optional: 1/4 cup black olives, sliced
  • Optional: 1/4 cup pine nuts

Instructions

  1. Gather and prep all ingredients: slice the sausage, halve the tomatoes, chop the onion.
  2. Bring a large pot of salted water to boil and cook pasta according to package instructions. Drain and set aside.
  3. Heat olive oil in a large skillet over medium heat. Add onion and garlic, sauté until translucent (about 3 minutes).
  4. Add sliced chicken sausage and cook until browned (5-7 minutes).
  5. Stir in cherry tomatoes and red pepper flakes, cook until softened (about 3 minutes).
  6. Add spinach and stir until wilted.
  7. Mix in the cooked pasta and combine well. Season with salt and pepper.
  8. Remove from heat and sprinkle with Parmesan. Toss gently.
  9. Garnish with fresh basil and serve warm.

Notes

For extra depth of flavor, roast the cherry tomatoes beforehand. Be sure to cook pasta al dente for best texture.
