Hearty and Nourishing Chicken Quinoa Bowl Recipe

A wholesome, protein-packed chicken quinoa bowl loaded with fresh vegetables, lean chicken, and fluffy quinoa, finished with zesty lemon and feta.

  • 1 cup quinoa
  • 2 boneless skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 red bell pepper, sliced
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 avocado, sliced
  • 1/4 cup feta cheese, crumbled
  • 2 tablespoons fresh parsley, chopped
  • Juice of 1 lemon

Instructions

  1. Rinse the quinoa under cold water to remove bitterness.
  2. Dice vegetables and cut chicken into bite-sized pieces.
  3. In a bowl, mix olive oil, paprika, garlic powder, onion powder, salt, and pepper. Coat chicken in marinade and set aside.
  4. Bring 2 cups of water to boil in a pot. Add rinsed quinoa, cover, reduce heat, and simmer for 15 minutes until fluffy.
  5. Heat a skillet over medium heat. Cook marinated chicken for 6–7 minutes per side until golden and cooked through.
  6. Remove chicken from skillet and let it rest, then slice.
  7. In a large bowl, combine cooked quinoa, chicken, bell pepper, tomatoes, cucumber, and avocado.
  8. Top with feta cheese and parsley. Drizzle with lemon juice.
  9. Toss well and serve fresh.

Notes

Marinate chicken for at least 30 minutes for maximum flavor. Always rinse quinoa before cooking and fluff it after for the best texture.
