Deliciously Savory Caramelized Onion Mushroom Swiss Stuffed Chicken Breasts

A flavorful dish of juicy chicken breasts stuffed with caramelized onions, sautéed mushrooms, and melted Swiss cheese – elegant enough for company, yet simple enough for a weeknight dinner.

  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 2 large onions, thinly sliced
  • 2 cups mushrooms, sliced
  • 1/2 cup Swiss cheese, grated
  • Salt and pepper to taste
  • 1 teaspoon dried thyme
  • 1/2 teaspoon garlic powder
  • Optional: 1/4 cup white wine for deglazing
  • Optional: 1 tablespoon balsamic vinegar
  • Optional: Spinach leaves

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil in a skillet over medium heat. Add sliced onions and cook until caramelized, about 15-20 minutes.
  3. Add mushrooms to the onions and cook until tender. Season with salt, pepper, and thyme.
  4. Remove mixture from heat, let cool slightly, and stir in grated Swiss cheese.
  5. Cut a pocket into each chicken breast, careful not to slice all the way through.
  6. Stuff each pocket with the onion, mushroom, and cheese mixture.
  7. Season outside of chicken with garlic powder, salt, and pepper.
  8. Place stuffed chicken in a baking dish and cover with foil.
  9. Bake for 25-30 minutes, or until chicken is cooked through and juices run clear.
  10. Remove foil during last 5 minutes to allow browning.

Notes

Let the filling cool before adding cheese to avoid melting too early. Don’t overstuff chicken to prevent spillage. Use a sharp knife to make neat pockets.
