  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • Salt and pepper to taste
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper (adjust to taste)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • Fresh parsley, chopped (for garnish)
  • Lemon wedges (for serving)

Instructions

  1. Remove steaks from the refrigerator at least 30 minutes before cooking to bring them to room temperature.
  2. In a small bowl, combine smoked paprika, cayenne pepper, oregano, thyme, onion powder, and garlic powder to create your Cajun seasoning.
  3. Pat the steaks dry with paper towels and season both sides generously with salt, pepper, and the Cajun seasoning. Let them sit for 5-10 minutes to absorb the flavors.
  4. Heat olive oil in a large cast-iron skillet over medium-high heat until it begins to smoke slightly.
  5. Add the steaks to the skillet and cook for about 3-4 minutes on each side for medium-rare, or adjust the timing to your desired doneness.
  6. In the final minute of cooking, add butter and minced garlic to the pan. Tilt the skillet and spoon the melted butter over the steaks repeatedly to baste them.
  7. Once cooked, remove the steaks from the skillet and let them rest for 5 minutes to allow the juices to redistribute.
  8. Garnish with fresh parsley and serve with lemon wedges on the side.

Notes

Use a cast-iron skillet for the best sear. Let steaks rest after cooking to retain juices. Use a meat thermometer: 130°F for medium-rare.
