  • 2 balls of fresh burrata cheese
  • 2 cups cherry tomatoes, halved
  • 1/4 cup fresh basil leaves, torn
  • 2 cloves garlic, minced
  • 3 tablespoons extra virgin olive oil
  • Salt and pepper to taste
  • Balsamic glaze for drizzling
  • Optional: 1/4 cup pine nuts, toasted
  • Optional: 1/4 cup arugula leaves
  • Optional: Crushed red pepper flakes for heat

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Slice the bread into 1/2-inch thick pieces and arrange them on a baking sheet.
  3. In a small bowl, combine the minced garlic with 2 tablespoons of olive oil.
  4. Brush each slice of bread with the garlic oil mixture, ensuring even coverage.
  5. Place the baking sheet in the preheated oven and toast the bread for about 5-7 minutes, or until golden brown and crispy.
  6. While the bread is toasting, halve the cherry tomatoes and set aside.
  7. Once the bread is toasted, remove it from the oven and let it cool slightly.
  8. Gently tear the burrata and distribute it evenly over each slice of bread.
  9. Top with halved cherry tomatoes and sprinkle with torn basil leaves.
  10. Drizzle with the remaining olive oil and balsamic glaze.
  11. Season with salt and pepper to taste. If desired, add optional toppings like pine nuts or arugula.
  12. Serve immediately and enjoy the burst of flavors!
