  • 2 cups cooked brown rice
  • 1 cup cherry tomatoes, halved

  • 1/2 cup red onion, thinly sliced
  • 1 avocado, sliced
  • 1/4 cup crumbled blue cheese (optional)
  • 2 tablespoons chopped fresh cilantro
  • Salt and pepper to taste
  • 1/2 cup black beans, rinsed and drained (optional)
  • 1/2 cup corn kernels (optional)
  • 1/4 cup sliced jalapeños (optional)
  • 1/4 cup Greek yogurt (optional)

Instructions

  1. Place the chicken breasts in a shallow dish and coat thoroughly with buffalo sauce.
  2. Cover and marinate in the refrigerator for at least 30 minutes.
  3. Cook brown rice according to package instructions and fluff with a fork.
  4. Preheat grill or grill pan over medium-high heat.
  5. Brush grill with olive oil to prevent sticking.
  6. Remove chicken from marinade and discard excess sauce.
  7. Grill chicken for 6-7 minutes per side until internal temperature reaches 165°F (75°C).
  8. Remove chicken and let rest for several minutes.
  9. Slice chicken into strips.
  10. Divide brown rice evenly among four bowls.
  11. Top with sliced chicken, cherry tomatoes, cucumber, red onion, and avocado.
  12. Add blue cheese, cilantro, and any optional toppings as desired.
  13. Season with salt and pepper to taste.
  14. Drizzle with additional buffalo sauce if desired and serve.
