Irresistible Brown Butter Snickerdoodles: A Twist on a Classic Cookie

Rich, nutty, and warmly spiced, these brown butter snickerdoodles are a delightful twist on the classic cookie. Crispy on the outside, soft on the inside, and bursting with cozy flavor.

  • 1 1/2 cups granulated sugar
  • 1/4 cup packed light brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon cream of tartar
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground nutmeg (optional)
  • 1 cup chopped nuts, such as pecans or walnuts (optional)
  • 1/2 cup white chocolate chips (optional)
  • 1/4 cup granulated sugar (for rolling)
  • 1 tablespoon ground cinnamon (for rolling)

Instructions

  1. In a medium saucepan, melt the butter over medium heat and continue cooking until it foams and turns golden brown with a nutty aroma, about 5–7 minutes. Remove from heat.
  2. Transfer the browned butter to a large mixing bowl and let cool for about 10 minutes.
  3. Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper.
  4. In a separate bowl, whisk together flour, baking soda, cream of tartar, and salt. Set aside.
  5. Add granulated sugar and brown sugar to the cooled butter and beat until well combined.
  6. Mix in eggs one at a time, then add vanilla extract and mix until smooth.
  7. Gradually stir in dry ingredients until just combined. Do not overmix.
  8. Fold in optional add-ins like chopped nuts or white chocolate chips if using.
  9. In a small bowl, combine 1/4 cup sugar and 1 tablespoon cinnamon.
  10. Roll dough into 1 1/2-inch balls and coat each ball in the cinnamon-sugar mixture.
  11. Place dough balls 2 inches apart on baking sheets.
  12. Bake for 10–12 minutes, until edges are golden and centers are just set.
  13. Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Let the brown butter cool before mixing to avoid curdling the eggs. Chill dough for 1 hour for enhanced flavor. Don’t overbake—cookies will finish setting on the baking sheet.
