A hearty and flavorful twist on a comfort classic, Bobby Flay’s goulash combines rich spices, lean meat, and vibrant vegetables for a gourmet one-pot meal.

  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 2 cups beef broth
  • 1 (14 oz) can diced tomatoes
  • 2 tablespoons tomato paste
  • 1 tablespoon smoked paprika
  • 1 teaspoon cayenne pepper (optional)
  • 1 teaspoon dried thyme
  • 1 cup elbow macaroni
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Optional: 1 cup sliced mushrooms
  • Optional: 1 cup zucchini, diced
  • Optional: 1/4 cup fresh parsley, chopped
  • Optional: 1/4 cup feta cheese, crumbled

Instructions

  1. Gather all ingredients and prepare vegetables: dice onion, chop bell peppers, and mince garlic.
  2. In a large pot or Dutch oven, heat olive oil over medium heat.
  3. Add diced onions and sauté until translucent, about 5 minutes.
  4. Add garlic and cook 1–2 minutes until fragrant.
  5. Add ground beef and cook until browned, breaking it apart with a spoon.
  6. Mix in chopped bell peppers and cook 3–4 minutes until softened.
  7. Stir in tomato paste, paprika, cayenne, and thyme.
  8. Add diced tomatoes with juice and beef broth. Bring to a simmer.
  9. Stir in elbow macaroni, cover, and cook 10–12 minutes until pasta is al dente.
  10. Season with salt and pepper to taste. Add optional mushrooms or zucchini if using.
  11. Once pasta is cooked and sauce thickens, remove from heat.
  12. Garnish with parsley and feta cheese before serving.

Notes

Let the goulash rest for a few minutes after cooking to enhance flavor. Avoid overcooking pasta as it continues to absorb liquid.
