A delightful blend of creamy cheesecake and antioxidant-rich blueberries in a protein-packed energy ball perfect for a quick, nourishing snack.

Ingredients

Scale
  • 1 cup dried blueberries
  • 1 cup raw cashews
  • 1/2 cup vanilla protein powder
  • 1/4 cup almond flour
  • 1/4 cup cream cheese or dairy-free alternative
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon sea salt
  • Optional: 1 tablespoon chia seeds
  • Optional: 1 tablespoon flaxseed meal
  • Optional: 1/4 cup shredded coconut
  • Optional: 1/4 cup chopped nuts (e.g., almonds, walnuts)

Instructions

  1. Gather and measure all ingredients.
  2. If using chia seeds, soak in water for 10 minutes until gel-like.
  3. In a food processor, pulse dried blueberries and cashews into a coarse meal.
  4. Add protein powder, almond flour, cream cheese, honey, vanilla extract, and sea salt. Blend until smooth and clumping.
  5. Fold in optional add-ins like chia, flaxseed, coconut, or nuts.
  6. Roll mixture into ping-pong sized balls. Wet hands if mixture is sticky.
  7. Place balls on parchment-lined baking sheet.
  8. Refrigerate for at least 30 minutes to firm up.

Notes

Avoid over-processing to prevent greasy texture. Room temperature cream cheese blends best. For added crunch, roll in crushed freeze-dried blueberries or nuts.
