Delicious Blueberry Cheesecake Protein Bites Recipe

Creamy, protein-packed no-bake bites bursting with blueberry flavor – perfect for a healthy snack or post-workout treat.

Ingredients

Scale
  • 1 cup of almond flour
  • 1/2 cup of vanilla protein powder
  • 1/3 cup of cream cheese (or vegan cream cheese)
  • 1/4 cup of honey or maple syrup
  • 1 teaspoon of vanilla extract
  • 1/2 cup of fresh or frozen blueberries
  • Optional: 1 tablespoon of chia seeds
  • Optional: 1/4 cup of crushed almonds or walnuts
  • Optional: A pinch of cinnamon

Instructions

  1. In a large mixing bowl, combine the almond flour and vanilla protein powder.
  2. Add in the cream cheese, honey or maple syrup, and vanilla extract. Mix until smooth and creamy.
  3. Gently fold in the blueberries without crushing them.
  4. Using a small cookie scoop or your hands, form the mixture into bite-sized balls.
  5. If using, roll the bites in chia seeds or crushed nuts for extra texture.
  6. Place the bites on a parchment-lined baking sheet and freeze for about 30 minutes to set.
  7. Transfer to an airtight container and store in the refrigerator.

Notes

Make sure cream cheese is at room temperature for smooth blending. If the mixture is too dry, add a tablespoon of almond milk. Avoid over-mixing after adding blueberries to keep the mixture from turning purple.
