Authentic Beef Vindaloo: A Spicy Delight from Goa

An authentic Indian Beef Vindaloo packed with bold spices, tangy vinegar, and tender beef, bringing the fiery flavors of Goa straight to your kitchen.

  • 2 lbs beef chuck, cut into 1-inch cubes
  • 2 tablespoons vegetable oil
  • 2 large onions, finely chopped
  • 4 garlic cloves, minced
  • 1-inch ginger, grated
  • 2 tablespoons red chili powder
  • 1 tablespoon turmeric powder
  • 1 tablespoon coriander powder
  • 1 teaspoon cumin seeds
  • 1 teaspoon mustard seeds
  • 1/2 cup white vinegar
  • Salt to taste
  • Optional: 1 potato, diced
  • Optional: 1 tablespoon brown sugar
  • Fresh cilantro for garnish

Instructions

  1. Marinate beef with vinegar, red chili powder, turmeric, and salt. Refrigerate for at least 2 hours or overnight.
  2. Blend garlic, ginger, cumin seeds, mustard seeds, and a little water into a smooth paste.
  3. Chop onions and set aside.
  4. Heat oil in a pot over medium heat and sauté onions until golden brown.
  5. Add Vindaloo paste and cook until the raw aroma disappears.
  6. Add marinated beef and stir to coat with spices.
  7. Mix in coriander powder and adjust salt. Add water to cover the beef and bring to a boil.
  8. Reduce heat, cover, and simmer for 1.5 to 2 hours until beef is tender and sauce thickens.
  9. Optional: Add diced potato 30 minutes before end of cooking.
  10. Garnish with fresh cilantro and serve hot.

Notes

Use Kashmiri chili powder for vibrant color and milder heat. Marinating overnight enhances flavor. Avoid excess water to maintain a rich consistency.
