Authentic Beef Masala Curry: A Flavorful Journey

  • 2 lbs beef chuck, cut into cubes
  • 2 tablespoons vegetable oil
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons garam masala
  • 1 tablespoon ground coriander
  • 1 teaspoon turmeric powder
  • 1 teaspoon cumin seeds
  • 2 cups crushed tomatoes
  • 1 cup beef broth
  • Salt and pepper to taste
  • 1/2 cup coconut milk
  • Fresh cilantro for garnish
  • Optional: 1 cup peas
  • Optional: 2 potatoes, diced
  • Optional: 1/2 cup yogurt for creaminess
  • Optional: 1 teaspoon chili powder for extra heat

Instructions

  1. Prepare all ingredients: chop onion, mince garlic, grate ginger, and cube beef.
  2. Marinate beef with salt, pepper, and 1 tablespoon garam masala for at least 20 minutes.
  3. Heat oil in a large pot over medium heat. Add cumin seeds and let sizzle for 30 seconds.
  4. Add onions and sauté until golden brown, about 8–10 minutes.
  5. Stir in garlic and ginger; cook for 2 minutes until fragrant.
  6. Add marinated beef; cook until browned on all sides, about 5–7 minutes.
  7. Stir in remaining garam masala, ground coriander, turmeric, and chili powder (if using); toast spices for 1 minute.
  8. Pour in crushed tomatoes and beef broth. Stir and bring to a simmer.
  9. Reduce heat to low, cover, and simmer for 1–1.5 hours, stirring occasionally. Add water if sauce thickens too much.
  10. Once beef is tender, add coconut milk and any optional add-ins. Simmer for 10–15 more minutes.
  11. Adjust seasoning with salt and pepper. Garnish with fresh cilantro before serving.

Notes

Simmer slowly for best tenderness. Avoid over-salting early as flavors intensify. Add chili gradually to control heat.
