  • 1.5 pounds (680g) beef chuck, cut into bite-sized cubes
  • 2 tablespoons vegetable oil
  • 1 large onion, finely chopped
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons tomato paste
  • 1 can (14 ounces) coconut milk
  • 1 cup beef broth
  • 2 teaspoons garam masala
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon cayenne pepper (adjust to taste)
  • Salt and pepper to taste
  • Optional: 1 cup peas
  • Optional: 1 red bell pepper, sliced
  • Fresh cilantro, for garnish
  • Lemon wedges, for serving

Instructions

  1. Prepare all ingredients: chop onion, mince garlic and ginger, cut beef into cubes, and measure spices.
  2. Heat oil in a large pot over medium heat. Add onions and sauté until translucent (5–7 minutes).
  3. Add garlic and ginger, stirring for 1–2 minutes until fragrant.
  4. Brown the beef cubes on all sides (about 8–10 minutes).
  5. Stir in tomato paste and cook for 2 minutes to deepen the flavor.
  6. Add garam masala, cumin, coriander, turmeric, cayenne, salt, and pepper. Mix well.
  7. Pour in coconut milk and beef broth. Stir and bring to a simmer.
  8. Reduce heat to low, cover, and cook for 1.5 to 2 hours until beef is tender.
  9. If using peas and bell pepper, add them in the last 15 minutes of cooking.
  10. Adjust seasoning to taste. Garnish with cilantro and serve with lemon wedges.

Notes

Marinate beef in spices beforehand for deeper flavor. Don’t rush the simmering—it helps tenderize the beef and blend flavors. Toasting spices before use enhances their aroma.
