Easy Baked Gnocchi with Tomatoes and Mozzarella: A Comforting Delight

  • 1 pound fresh gnocchi
  • 2 cups cherry tomatoes, halved
  • 2 cups mozzarella cheese, shredded
  • 1/2 cup fresh basil leaves, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Optional: 1/4 cup grated Parmesan cheese
  • Optional: Red pepper flakes
  • Optional: 1/2 cup sautéed mushrooms
  • Optional: Spinach or arugula

Instructions

  1. Preheat oven to 400°F (200°C). Grease a large baking dish with olive oil.
  2. In a large bowl, mix cherry tomatoes, garlic, olive oil, salt, and pepper until coated.
  3. Add gnocchi to the bowl and toss to coat evenly.
  4. Transfer mixture to the baking dish and spread evenly.
  5. Sprinkle mozzarella cheese over the top.
  6. Bake for 20–25 minutes, until cheese is bubbly and golden.
  7. Let cool for a few minutes. Garnish with fresh basil and serve.

Notes

Roast cherry tomatoes beforehand to enhance sweetness. Try different cheeses like provolone or fontina for a unique twist. Don’t overcrowd the dish and avoid overbaking for best texture.
