  • 4 cod fillets (about 6 ounces each)
  • 1 can (13.5 oz) of full-fat coconut milk
  • Juice and zest of 2 lemons
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh cilantro for garnish
  • Optional: 1 teaspoon red pepper flakes
  • Optional: 1 tablespoon soy sauce
  • Optional: 1/2 cup cherry tomatoes, halved
  • Optional: 1/4 cup sliced green onions

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Pat cod fillets dry and season with salt and pepper.
  3. In a bowl, mix coconut milk, lemon juice, lemon zest, garlic, and ginger.
  4. Heat olive oil in an ovenproof skillet over medium heat. Sear cod for 2-3 minutes per side.
  5. Pour coconut-lemon sauce over cod. Add optional ingredients if using.
  6. Transfer skillet to oven and bake for 12-15 minutes, until cod is flaky.
  7. Remove from oven, garnish with cilantro, and serve immediately.

Notes

Use full-fat coconut milk for the best texture. Don’t overcook the cod—check if it flakes easily with a fork. Marinating the cod in the sauce for 15 minutes before cooking enhances flavor.
