Mia Langston – founder of EatBrightly

I’m Mia Langston, a 38-year-old chef and nutrition enthusiast living in beautiful Asheville, North Carolina. My journey into healthy cooking wasn’t linear, it was a winding path full of curiosity, transformation, and an unwavering passion for food that nourishes both body and soul.

Rooted in Real Food & Family Traditions

I grew up in a small town in upstate New York where Sunday dinners were sacred. My mom’s casseroles could fix almost anything, and my dad taught me to grill salmon before I was tall enough to reach the stove. But it wasn’t until my mid-twenties, after a health scare, that I truly understood the healing power of intentional cooking.

Self-Taught, Passion-Fueled

No formal culinary school here, just years of experimenting with plant-based meals, soaking up wisdom from wellness retreats, online courses, and even flops like my unforgettable chunky cashew sauce. I’ve learned that every kitchen mistake is a stepping stone toward something delicious and joyful.

What I Believe In

Healthy food should never be boring or restrictive. I don’t count calories, I count colors on the plate. Think:

I believe in eating intuitively, seasonally, and with joy.

What I Do Now

Today, I spend my days:

  • Teaching virtual cooking classes
  • Partnering with local farms to keep things as fresh and sustainable as possible

I share my kitchen with my partner, our rescue dog Luna, and a small jungle of potted herbs I talk to like friends.
